Coeur à la Crème Fraîche

Somebody's Mother's Chocolate Sauce - Couer a la Creme Fraiche

Serves 4 to 6
(We like to double this recipe for a fuller cake!)

Ingredients:

  • 3/4 pound cottage cheese
  • 8 ozs cream cheese
  • 1/2 cup sour cream
  • 1 tbs powdered sugar
  • 1/2 cup heavy cream
  • 1/2 of a vanilla bean
Strawberry Sauce:
  • 1 qt fresh strawberries
  • 1 cup sugar
  • 2 tbs Pear William brandy
You will also need:
  • 3-cup heart mold or a 3.5-inch wicker basket
  • 1 cheesecloth

Combine the cottage cheese, cream cheese, and sour cream. Beat with an electric mixer until smooth. Add the powdered sugar. Add the vanilla bean. Whip the cream and fold it into the cheese mixture.

Line a 3-cup heart mold with cheesecloth, letting the cloth hang over the edges. Spoon the mixture into the lined mold; fold the cheesecloth over the top and put the mold on a tray in the refrigerator overnight.

To make the strawberry sauce, mash the strawberries. Add the sugar. Cook on low heat until soft. Press through a fine sieve, add brandy, and chill.

To serve, unfold cheesecloth and invert mold on a serving plate. Remove cheesecloth. Drizzle Somebody's Mother's Caramel Sauce generously over the top and garnish with strawberries. Serve with strawberry sauce and scones.

Sugar Cookies

Somebody's Mother's Chocolate Sauce - Sugar Cookies

Ingredients:

  • 1 1/2 cups flour
  • 1 tsp cream of tartar
  • pinch of baking soda
  • 1 cup sugar
  • 1 1/2 sticks butter
  • 1 egg
  • 1 tsp Mexican vanilla

Combine flour, cream of tartar and baking soda; set aside. Cream the sugar and butter. Add egg and vanilla, mixing well. Stir the flour mixture into the butter mixture. Chill the dough so it will not pick up so much flour when it's rolled out.

Roll on a lightly floured surface, but into desired shapes and dust with sugar.

Bake on a lightly buttered or oiled cookie sheet for about 20 minutes at 350 degrees, being careful not to let them get too dark. Remove the cookies from the oven and let them cool a little.

Ice with Somebody's Mother's Caramel butter cream and sprinkle colored glazing sugar, appropriate to the season.

White Chocolate Raspberry Milkshake

Ingredients:

  • 3-4 ozs Somebody's Mother's White Chocolate Sauce with Pear William
  • 3 ozs (2 shots) Godiva White Chocolate Liqueur
  • 3 heaping scoops Häagen-Dazs White Chocolate Raspberry Truffle ice cream
  • 1 cup 2% milk
  • raspberries for garnish
  • 1 cup or more of ice

In a blender mix the first four ingredients together. Swirl the white chocolate sauce around the rim of a glass. Pour mixture into glass. Garnish with raspberries.

Dulce de Leche Milkshake

Ingredients:

  • 3-4 ozs Somebody's Mother's Caramel Sauce
  • 3 ozs (2 shots) Kahlua
  • 3 heaping scoops Häagen-Dazs Dulce de Leche ice cream
  • 1 cup 2% milk
  • ground chocolate toffee pieces for garnish
  • 1 cup or more of ice

In a blender mix all ingredients together. Meanwhile, swirl caramel sauce around the rim of a glass. Pour mixture into glass and sprinkle the ground chocolate pieces on top. Enjoy!

Really Chocolate Milkshake

Ingredients:

  • 3-4 ozs Somebody's Mother's Chocolate Sauce
  • 3 ozs (2 shots) Godiva Chocolate Liqueur
  • 3 heaping scoops Häagen-Dazs Chocolate ice cream
  • 1 cup 2% milk
  • ground nutmeg garnish
  • 1 cup or more of ice

In a blender mix the first four ingredients together. Pour mixture into a glass and sprinkle with nutmeg. Enjoy!

Butter Cream Icing

Somebody's Mother's Chocolate Sauce - Sugar Cookies

Ingredients:

  • 1/2 cup butter
  • 1/4 tsp salt
  • 2 1/2 cups sifted confectioners' sugar
  • 3-4 tbs milk
  • 1 tsp Mexican vanilla

Cream butter, add salt and sugar, a small amount at a time, beating all the while. Add milk if needed to slightly moisten the mixture. Depending on what you're serving, add one mini jar of Somebody's Mother's Chocolate, Caramel, or White Chocolate Sauce with Pear William.
